The expression of Estremoz’s terroir for demanding consumers
New season requires a new wine! For this reason, the family Serrano Mira, owner of Herdade das Servas – wine estate located a few kilometers from the heart of the city of Estremoz – and one of the oldest connected to the production of wine in the Alentejo (since 1667), suggests the long awaited Herdade das Servas Selected White Harvest 2017 ‘.
The lot of ‘Herdade das Servas Selected White Harvest’ includes the Roupeiro (35%), Viognier (30%), Verdelho (25%) and Sauvignon Blanc (10%) varieties. Each one is subjected to fermentation in stainless steel tanks with temperature control. After the end of this phase, the wine stagnates for three months. After bottled it rests for another two months.
As a result, it appears as a clear citrus-colored white. The aromas of the apricot are prominent in the nose, very common in the Viognier variety, peach, lemon and tropical notes, characteristic of the castes mentioned above. In the mouth it turns out to be fresh, fruity, complex and bulky, with a persistent finish, an excellent combination of requirements to enjoy on the terrace, in the company of friends, or to harmonize with salads, seafood, fish and white meats. It is recommended that it be consumed during the first three years.
